New Mexico Chile Institute Demonstration Garden
located in Las Cruces, New Mexico 

This might be a bit of a strange garden for some, but spicy chile addicts will definitely want to look this place up. The New Mexico Chile Institute is located on the campus of New Mexico State University, which has been involved in the cultivation of chile for a century. The institute, which has been in existence since 1992, does research on and seeks to educate the public about the different types of chiles.

While the institute is located on the main campus, their seasonal teaching and demonstration garden is actually located off the campus (at the Fabian Garcia Horticulture Farm off of University Ave.) and features a wide variety of over 150 different types of chiles from the 5 main chile species (C. annuum, C. baccatum, C. chinense, and C. frutescens). The garden also focuses on preventive measures for chile growers for such things as plant diseases. The Institute also host the yearly New Mexico Chile Conference.

If you're going to be in the area, this might be a nice idea to spice up your trip. They recommend visiting the garden from late July to late September.
